Have you ever used one of those cans of compressed air to clean your computer? As you released air from the can you probably noticed that the outside of the can got cold. This is because as air gets released from the can, the remaining gas has to expand to fill the space left by that exiting air. In order to expand, the gas requires energy which it pulls in from the space around it making the surface of the can feel cold.

Your air conditioning system uses the same principle, except that instead of compressed air it uses a heat-sensitive refrigerant. If you have a central AC system, then you have an indoor evaporator coil and an outdoor condensing coil. In the outside unit contains a compressor that compresses the gas and circulates it to the indoor unit which contains an evaporator coil. The refrigerant is then released and pulls in energy from the area around it, just like your computer cleaner. A fan in the indoor unit blows the warm air from your home across the cold evaporator coils. The refrigerant absorbs heat in the air and then carries it outside to the condensing coils where the heat is exhausted. This process will not work properly if your system has too little refrigerant.
